- 1 1/2 pounds large shrimp peeled and deveined, tails on
- 3 tbsp unsalted butter melted
- 2 tbsp olive oil
- 4 cloves garlic minced
- 1/3 cup grated Parmesan cheese
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1/2 tsp salt or to taste
- 1/4 tsp black pepper
- 2 tbsp fresh parsley chopped
- Lemon wedges for serving
Make Garlic Butter Mix
In a bowl, mix melted butter, olive oil, garlic, lemon juice, lemon zest, salt, pepper, and Italian seasoning together.
- Use large shrimp so they stay juicy and do not overcook.
- Pat shrimp very dry for better roasting and browning.
- Do not roast too long. Overcooked shrimp become rubbery and tough.
- Fresh garlic gives stronger flavor than garlic powder.
- Grate your own Parmesan if possible for best melt and taste.
