Ingredients
  

  • 1 1/2 pounds large shrimp peeled and deveined, tails on
  • 3 tbsp unsalted butter melted
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1/3 cup grated Parmesan cheese
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley chopped
  • Lemon wedges for serving

Instructions
 

Preheat the Oven

  • Heat your oven to 425°F (220°C). This high heat helps roast the shrimp quickly.

Prepare the Baking Sheet

  • Line a large baking sheet with parchment paper or lightly oil it. This prevents sticking.

Dry the Shrimp

  • Pat shrimp dry with paper towels. Dry shrimp roast better and get a light, tasty crust.

Make Garlic Butter Mix

  • In a bowl, mix melted butter, olive oil, garlic, lemon juice, lemon zest, salt, pepper, and Italian seasoning together.

Coat the Shrimp

  • Add shrimp to the bowl. Toss until every shrimp is coated in the garlic butter mixture.

Arrange on Baking Sheet

  • Spread shrimp in a single layer on baking sheet. Do not overcrowd, so they roast not steam.

Add Parmesan and Paprika

  • Sprinkle Parmesan cheese and paprika evenly over the shrimp. This gives color and cheesy flavor.

Roast the Shrimp

  • Place baking sheet in hot oven. Roast 7–8 minutes, until shrimp turn pink and opaque.

Broil for Extra Color

  • Optional: Turn oven to broil for 1–2 minutes. This browns cheese lightly for extra flavor.

Garnish and Serve

  • Remove from oven. Sprinkle with fresh parsley. Serve hot with lemon wedges on the side.

Notes

  • Use large shrimp so they stay juicy and do not overcook.
  • Pat shrimp very dry for better roasting and browning.
  • Do not roast too long. Overcooked shrimp become rubbery and tough.
  • Fresh garlic gives stronger flavor than garlic powder.
  • Grate your own Parmesan if possible for best melt and taste.
  • Add chili flakes if you like some gentle heat.
  • Taste and adjust salt after adding Parmesan, as cheese is salty.
