Ingredients
  

  • Potatoes – 4 medium peeled and grated
  • Onion – 1 small grated
  • Eggs – 2 large beaten
  • All-purpose flour – 3 tablespoons
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Oil – 3 tablespoons for frying
  • Optional toppings: sour cream applesauce, chives

Instructions
 

Prepare the potatoes

  • Grate potatoes and onion. Place in a clean cloth. Squeeze out extra water to keep pancakes crispy.

Mix ingredients

  • In a bowl, combine grated potatoes, onion, eggs, flour, salt and pepper. Stir until mixture is smooth.

Heat the pan

  • Add oil to skillet. Heat on medium until hot but not smoking. Ready for frying pancakes.

Form pancakes

  • Spoon potato mixture into pan. Flatten gently with spatula. Keep pancakes small for even cooking.

Fry the pancakes

  • Cook 3–4 minutes per side until golden brown and crispy. Flip carefully to avoid breaking them.

Drain pancakes

  • Remove pancakes from skillet. Place on paper towels. Drain excess oil for a lighter taste.

Serve warm

  • Serve immediately with sour cream, applesauce or your favorite toppings. Enjoy crispy and soft texture.
