Ingredients
  

  • Cooked jasmine rice – 3 cups cold
  • Fresh spinach – 2 cups packed
  • Fresh basil – ½ cup
  • Fresh parsley – ¼ cup
  • Zucchini – 1 cup finely chopped
  • Green peas – 1 cup
  • Broccoli florets – 1 cup small pieces
  • Eggs – 2 large lightly beaten
  • Garlic – 2 cloves minced
  • Olive oil – 2 tablespoons
  • Soy sauce – 2 tablespoons
  • Parmesan cheese – ¼ cup grated
  • Salt – ½ teaspoon
  • Black pepper – ¼ teaspoon
  • Lemon juice – 1 tablespoon fresh

Instructions
 

Make Green Sauce

  • Place the fresh spinach, basil, parsley, and lemon juice into a blender. Blend until very smooth and bright green. Scrape down the sides if needed and set this green sauce aside.

Cook Garlic

  • Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for one minute until fragrant. Do not let it brown because burnt garlic tastes bitter.

Cook Vegetables

  • Add chopped zucchini, green peas, and broccoli florets to the skillet. Cook for about five minutes. Stir often until vegetables are tender but still bright and fresh.

Scramble Eggs

  • Push the vegetables to one side of the skillet. Pour the beaten eggs into the empty space. Scramble gently until fully cooked, then mix them together with the vegetables.

Add Rice

  • Add the cold cooked jasmine rice to the skillet. Break up any clumps with a spoon. Stir well so the rice mixes evenly with eggs and vegetables.

Add Green Sauce

  • Pour the green herb sauce over the rice mixture. Stir slowly so every grain turns green. Cook for three to four minutes until heated through and fragrant.

Season Rice

  • Add soy sauce, salt, and black pepper. Stir again and taste. Adjust seasoning if needed. Cook one more minute so all flavors blend together nicely.

Finish and Serve
