Ingredients
  

  • 1 pound boneless chicken breasts
  • 1 cup long grain rice
  • 1 tablespoon olive oil
  • 1 tablespoon fresh ginger grated
  • 3 garlic cloves minced
  • 1 small onion chopped
  • 6 cups chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 carrot sliced
  • 2 green onions chopped

Instructions
 

Heat the Oil

  • Place the soup pot on medium heat. Add olive oil and let it warm gently.

Cook the Aromatics

  • Add onion, garlic and ginger. Stir slowly until soft and fragrant.

Add the Chicken

  • Place chicken into the pot. Stir and cook until lightly white on all sides.

Pour the Broth

  • Add chicken broth carefully. Stir everything together and bring to a gentle boil.

Add Rice and Carrot

  • Add rice and sliced carrot. Stir once and reduce heat to low.

Simmer the Soup

  • Cover the pot. Let soup cook slowly for twenty minutes.

Shred the Chicken

  • Remove chicken pieces. Shred them gently using two forks.

Return Chicken

  • Place shredded chicken back into the soup. Stir well.

Season the Soup

  • Add salt and black pepper. Taste and adjust seasoning if needed.

Finish and Rest

  • Turn off heat. Let soup rest five minutes before serving.

  • Cut chicken evenly for better cooking.
  • Stir rice gently to avoid sticking.
