  • Tomato paste 2 tablespoons
  • All-purpose flour 1 tablespoon
  • Dark ale beer 500 ml
  • Beef stock 500 ml
  • Bay leaves 2
  • Fresh thyme 2 sprigs
  • Brown sugar 1 teaspoon

Instructions
 

Season the Beef

  • Season beef with salt and pepper. Mix well so every piece gets flavor before cooking.

Brown the Beef

  • Heat oil in the pot. Add beef in batches. Cook until brown on all sides.

Cook the Vegetables

  • Remove beef. Add onions, carrots and celery. Cook until soft and lightly golden.

Add Garlic and Paste

  • Add garlic and tomato paste. Stir well. Cook one minute to release strong flavor.

Sprinkle the Flour

  • Sprinkle flour over vegetables. Stir well. This helps thicken the stew later.

Pour the Ale

  • Slowly pour in the ale. Stir and scrape the pot bottom gently.

Add Stock and Beef

  • Add beef stock and browned beef back to the pot. Mix everything gently.

Add Herbs and Sugar

  • Add bay leaves, thyme, and sugar. These balance and deepen the stew taste.

Simmer Slowly

  • Cover the pot. Simmer on low heat for two hours until beef feels tender.
