Ingredients
  

  • Chicken breast boneless – 2 medium
  • Olive oil – 2 tablespoons
  • Salt – ½ teaspoon
  • Black pepper – ½ teaspoon
  • Mixed salad greens – 4 cups
  • Cherry tomatoes – 1 cup halved
  • Cucumber – 1 medium sliced
  • Red onion – ¼ cup thin slices
  • Lemon juice – 2 tablespoons
  • Dijon mustard – 1 teaspoon
  • Honey – 1 teaspoon
  • Extra olive oil for dressing – 2 tablespoons

Instructions
 

Season the chicken

  • Season chicken breasts with salt and black pepper on both sides evenly.

Cook the chicken

  • Heat olive oil in a pan over medium heat. Cook chicken until golden and fully cooked inside.

Rest the chicken

  • Remove chicken from pan. Let it rest five minutes. This keeps it juicy.

Prepare the vegetables

  • Wash and chop salad greens, tomatoes, cucumber and red onion. Place them in a bowl.

Make the dressing

  • Mix lemon juice, Dijon mustard, honey and olive oil until smooth and shiny.

Slice the chicken

  • Cut rested chicken into thin slices. Keep slices even for better texture.

Assemble the salad

  • Add chicken to vegetables. Pour dressing over top. Toss gently before serving.
