Ingredients
  

  • Lobster tails – 2 large
  • Pasta linguine or spaghetti – 400 grams
  • Olive oil – 3 tablespoons
  • Butter – 2 tablespoons
  • Garlic – 4 cloves minced
  • Shallot – 1 small chopped
  • Cherry tomatoes – 1 cup halved
  • White wine – ½ cup
  • Heavy cream – 1 cup
  • Lemon juice – 1 tablespoon
  • Salt – to taste
  • Black pepper – to taste
  • Red chili flakes – ½ teaspoon
  • Fresh parsley – 2 tablespoons chopped

Instructions
 

Boil the Pasta

  • Boil salted water. Add pasta and cook until tender. Save some pasta water. Drain pasta gently.

Prepare the Lobster

  • Cut lobster shells carefully. Remove meat slowly. Chop lobster into big pieces. Keep shells aside.

Cook the Lobster

  • Heat oil and butter in pan. Add lobster pieces. Cook briefly until just opaque. Remove and keep warm.

Make the Base

  • In same pan, add garlic and shallot. Cook on low heat until soft and fragrant.

Add Tomatoes and Wine

  • Add cherry tomatoes. Cook until soft. Pour white wine. Let it reduce slightly.

Create the Sauce

  • Add cream and lobster shells. Simmer gently to build deep lobster flavor.

Season the Sauce

  • Remove shells. Add salt, pepper, chili flakes and lemon juice. Stir slowly.

Combine Pasta and Lobster

  • Add pasta and lobster back to pan. Toss well. Add pasta water if sauce feels thick.

Finish and Serve

  • Turn off heat. Sprinkle parsley. Serve hot and fresh for best taste.

Notes

  • Use fresh lobster for best flavor
  • Do not overcook the lobster
  • Salt pasta water well
  • Use good quality cream
  • Keep sauce on gentle heat
