Ingredients
  

  • Olive oil 2 tablespoons
  • Onion 1 medium, finely chopped
  • Garlic cloves 3, minced
  • Red bell pepper 1, sliced
  • Paprika 1 teaspoon
  • Saffron threads a small pinch
  • Short-grain rice 2 cups
  • Chicken stock 4 cups, warm
  • Chicken thighs 300 grams, chopped
  • Chorizo sausage 150 grams, sliced
  • Shrimp 200 grams, peeled
  • Mussels 200 grams, cleaned
  • Frozen peas ½ cup
  • Salt 1 teaspoon
  • Black pepper ½ teaspoon
  • Lemon wedges for serving
  • Fresh parsley chopped, for garnish

Instructions
 

Heat the oil

  • Heat olive oil in a wide pan over medium heat. Make sure oil coats the pan evenly.

Cook onion and garlic

  • Add onion and garlic. Cook gently until soft and lightly golden, stirring often.

Add bell pepper

  • Add sliced bell pepper. Cook for three minutes until slightly tender and fragrant.

Add spices

  • Stir in paprika and saffron. Cook briefly to release color and aroma.

Add rice

  • Add rice to the pan. Stir well so grains absorb oil and spices evenly.

Add stock

  • Pour warm stock slowly over rice. Stir once, then spread rice evenly.

Add chicken and chorizo

  • Place chicken and chorizo into the rice. Press gently so they sit inside.

Simmer gently

  • Lower heat and let rice simmer uncovered. Do not stir during this stage.

Add seafood

  • Add shrimp and mussels on top. Press lightly into rice without stirring.

Add peas

  • Sprinkle peas over the pan. This adds color and light sweetness.

Cook until done

  • Cook until rice is tender and liquid absorbs fully, about twenty minutes.

Create crust

  • Increase heat briefly for one minute to form a light crispy base.

Rest the paella

  • Remove from heat and rest five minutes. This helps flavors settle.

Garnish and serve

  • Garnish with parsley and lemon wedges. Serve directly from the pan.

  • Use short-grain rice for best texture.
  • Do not stir rice after adding stock.
  • Keep heat gentle for even cooking.
  • Warm stock helps rice cook evenly.
