  • Olive oil – 3 tablespoons
  • Salt – 2 teaspoons
  • Black pepper – 2 teaspoons
  • Garlic cloves – 6 crushed
  • Fresh rosemary – 2 tablespoons chopped
  • Fresh thyme – 2 tablespoons chopped
  • Butter – 3 tablespoons

Instructions
 

Bring meat to room temperature

  • Remove rib roast from fridge. Let it rest at room temperature for one hour.

Preheat the oven

  • Preheat oven to 450°F. This high heat helps form a strong crust.

Season the roast

  • Rub olive oil all over the meat. Season generously with salt and black pepper.

Add herbs and garlic

  • Press garlic, rosemary and thyme onto the roast. Make sure herbs stick well.

Prepare for roasting

  • Place roast on a rack inside roasting pan. Fat side should face upward.

Start roasting

  • Roast at 450°F for 20 minutes. This seals the outside and builds flavor.

Lower oven temperature

Rest the roast

Slice and serve
