Ingredients
  

  • Russet potatoes – 4 large
  • Cold water – enough for soaking
  • White vinegar – 1 tablespoon
  • Salt – 1 teaspoon plus more for seasoning
  • Vegetable oil – for frying
  • Black pepper – to taste
  • Fresh parsley chopped – optional

Instructions
 

Cut the Potatoes

  • Peel the potatoes and cut them into even sticks. Keep the size similar for even cooking.

Soak the Potatoes

  • Place potato sticks in cold water. Soak for at least thirty minutes to remove excess starch.

Rinse and Drain

  • Rinse the potatoes again with fresh water. Drain well and pat completely dry with towels.

Parboil the Potatoes

  • Boil water with vinegar and salt. Add potatoes and cook for five minutes until slightly soft.

Cool the Potatoes

  • Remove potatoes carefully and place on a tray. Let them cool completely before frying.

Heat the Oil

  • Heat oil to 325°F in a deep pan. Use enough oil so fries can float freely.

First Fry

  • Fry potatoes in small batches for five minutes. They should cook without turning brown.

Drain and Rest

  • Remove fries and place on paper towels. Let them rest for ten minutes.

Second Fry

  • Increase oil temperature to 375°F. Fry again until golden, crispy, and perfectly cooked.

Season and Serve

  • Remove fries and season immediately with salt and pepper. Serve hot for best taste.
