Ground Beef Enchiladas Recipe are soft, cheesy and full of flavor. They are classic Mexican comfort food. The tortillas are filled with seasoned beef and cheese.

Ingredients
  

  • 1 lb ground beef
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar or Mexican blend cheese
  • 8 small flour or corn tortillas
  • 1 can 10 oz red enchilada sauce
  • 2 tablespoons olive oil
  • Optional toppings: sour cream chopped cilantro, sliced olives

Instructions
 

Preheat Oven

  • Set the oven to 375°F (190°C) to bake the enchiladas.

Cook the Beef

  • Heat olive oil in a skillet. Add ground beef and cook until browned.

Add Onions and Garlic

  • Add chopped onion and garlic. Cook until the onion is soft and fragrant.

Season the Beef

  • Stir in chili powder, cumin, salt, and pepper. Mix well and cook 1–2 minutes.

Prepare the Tortillas

  • Warm tortillas in a pan or microwave. This makes them easier to roll.

Fill the Tortillas

  • Place 2–3 tablespoons of beef mixture in each tortilla. Sprinkle with cheese.

Roll the Tortillas

  • Roll each tortilla tightly around the filling. Place seam side down in baking dish.

Add Sauce

  • Pour enchilada sauce evenly over the rolled tortillas.

Add Extra Cheese

  • Sprinkle remaining cheese on top of the sauce for a cheesy crust.

Bake

  • Cover with foil and bake for 20 minutes. Remove foil for last 5 minutes for a golden top.

Cool and Serve

  • Let enchiladas cool for 5 minutes. Top with sour cream, cilantro, or olives.

Notes

  • Use fresh cheese for better melt and flavor.
  • Warm tortillas slightly to prevent cracking when rolling.
  • Adjust chili powder based on your spice preference.
  • You can add beans or corn to the filling for extra texture.
  • Cover with foil while baking to keep the enchiladas moist.
  • Let enchiladas rest for a few minutes before serving for easier cutting.
