Ingredients
  

  • 2 cups elbow macaroni
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup celery chopped
  • 1/2 cup red bell pepper chopped
  • 1/4 cup red onion finely chopped
  • 2 hard-boiled eggs chopped
  • 1/4 cup fresh parsley chopped

Instructions
 

Cook the macaroni

  • Boil elbow macaroni in salted water until tender but firm. Drain and rinse under cold water to cool.

Prepare the dressing

  • In a bowl, mix mayonnaise, sour cream, apple cider vinegar, Dijon mustard, sugar, salt and pepper until smooth.

Chop vegetables and eggs

  • Chop celery, red bell pepper, red onion and hard-boiled eggs into small, even pieces for even texture in salad.

Combine pasta and dressing

  • Add cooled macaroni to a large bowl. Pour dressing over pasta and stir gently until pasta is evenly coated.

Add vegetables and eggs

  • Fold in chopped celery, bell pepper, onion, eggs and parsley. Mix carefully so ingredients stay evenly distributed.

Chill before serving

  • Cover the salad and place in the fridge for at least 1 hour. Chilling helps flavors combine and enhances taste.

Taste and adjust

  • After chilling, taste the salad. Add extra salt, pepper or vinegar if needed for balance.

Serve

  • Spoon macaroni salad into a serving dish. Garnish with extra parsley or paprika if desired. Serve cold and enjoy.
