Ingredients

  • pounds ground beef 80/20
  • 4 burger buns brioche or sesame
  • 4 slices cheddar or American cheese
  • 1 small onion thinly sliced
  • 1 tablespoon butter
  • 1 tomato sliced
  • Lettuce leaves
  • Salt to taste
  • Black pepper to taste

Secret sauce ingredients

  • ¼ cup mayonnaise
  • 1 tablespoon ketchup
  • 1 tablespoon mustard
  • 1 teaspoon pickle relish
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika

Instructions

Make the Secret Sauce

  • Mix mayonnaise, ketchup, mustard, relish, garlic powder and paprika. Stir until smooth and creamy, then chill in the fridge.

Cook the Onions

  • Melt butter in a skillet on low heat. Add onions and cook slowly until golden and sweet, stirring sometimes to stop burning.

Shape the Burger Patties

  • Divide beef into four even balls. Press gently into patties, not too thin, so they stay juicy inside during cooking.

Season the Patties

  • Sprinkle salt and pepper on both sides. Keep seasoning simple so the beef flavor stays strong and rich without overpowering sauce.

Heat the Grill or Pan

  • Preheat grill or grill pan to medium high heat. A hot surface gives the patties a tasty sear and locks in juices.

Cook the Patties

  • Place patties on hot grill. Cook each side for about four minutes until browned outside and juicy inside.

Add the Cheese

  • Place cheese slices on patties during last minute of cooking. Cover pan lightly so cheese melts smoothly over the meat.

Toast the Buns

  • Lightly toast buns on grill or pan. This keeps them from getting soggy and adds a nice warm crunch for each bite.

Build the Burger

  • Spread secret sauce on buns. Add lettuce, tomato, cheesy patty and caramelized onions. Press top bun gently and serve hot.

Notes

  • Use 80/20 beef for juicy patties
  • Do not press patties while cooking or juices escape
  • Let patties rest one minute before serving
  • Toasting buns prevents soggy burgers
  • Add jalapeños for spice
  • Swap cheddar for pepper jack for extra kick
  • Double the sauce because everyone loves extra
