For the pastry:
- 2 sheets puff pastry thawed
- 1 egg for egg wash
For the filling:
- 1 lb ground beef or chicken
- 1 small onion finely chopped
- 2 cloves garlic minced
- 1 bell pepper finely chopped
- 2 green onions chopped
- 1 tbsp tomato paste
- 1 tsp thyme
- 1 tsp paprika
- ½ tsp black pepper
- 1 tsp salt
- 1 tbsp olive oil
- 1 scotch bonnet pepper optional for heat
Cook the Filling
Heat oil in a pan.
Add onions, garlic, bell pepper, and green onions.
Cook for 2–3 minutes.
Add ground meat and cook until browned.
Stir in tomato paste, thyme, paprika, black pepper, and salt.
Cook for 5–7 minutes until well seasoned.
Let the filling cool.
Fill the Patties
Spoon 1–2 tbsp of meat filling onto each rectangle.
Fold the pastry over to form a square or rectangle.
Press edges with a fork to seal.
Bake the Patties
Place patties on a baking sheet.
Bake at 400°F (200°C) for 20–25 minutes.
They should be golden brown and crispy.
- Make sure the filling is cool before adding it to pastry.
- Do not overfill or the patties may burst.
- Add scotch bonnet pepper for authentic spicy flavor.
- Puff pastry must stay cold for perfect flakiness.
- Brush lightly with egg wash for shiny golden tops.
