Ingredients
  

For the pastry:

  • 2 sheets puff pastry thawed
  • 1 egg for egg wash

For the filling:

  • 1 lb ground beef or chicken
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 bell pepper finely chopped
  • 2 green onions chopped
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp paprika
  • ½ tsp black pepper
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1 scotch bonnet pepper optional for heat

Instructions
 

Cook the Filling

  • Heat oil in a pan.
  • Add onions, garlic, bell pepper, and green onions.
  • Cook for 2–3 minutes.
  • Add ground meat and cook until browned.
  • Stir in tomato paste, thyme, paprika, black pepper, and salt.
  • Cook for 5–7 minutes until well seasoned.
  • Let the filling cool.

Prepare the Puff Pastry

  • Roll out the puff pastry on a flat surface.
  • Cut each sheet into 6 rectangles.

Fill the Patties

  • Spoon 1–2 tbsp of meat filling onto each rectangle.
  • Fold the pastry over to form a square or rectangle.
  • Press edges with a fork to seal.

Add Egg Wash

  • Beat one egg.
  • Brush the top of each patty for a golden finish.

Bake the Patties

  • Place patties on a baking sheet.
  • Bake at 400°F (200°C) for 20–25 minutes.
  • They should be golden brown and crispy.

Serve and Enjoy

  • Let them cool slightly before eating.

Notes

  • Make sure the filling is cool before adding it to pastry.
  • Do not overfill or the patties may burst.
  • Add scotch bonnet pepper for authentic spicy flavor.
  • Puff pastry must stay cold for perfect flakiness.
  • Brush lightly with egg wash for shiny golden tops.
