Ingredients
  

  • 2 large chicken breasts
  • 1 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber slices
  • ½ cup shredded carrots
  • ½ cup corn optional
  • ½ cup red onions sliced
  • ¼ cup blue cheese or feta optional
  • 3 tablespoons Greek yogurt
  • 1 tablespoon ranch dressing
  • 1 teaspoon lemon juice

Instructions
 

Season the Chicken

  • Rub chicken breasts with garlic powder, paprika, salt and black pepper until fully coated on all sides.

Heat the Pan

  • Warm olive oil in a pan over medium heat. Let the oil heat until it shimmers.

Cook the Chicken

  • Place chicken in the pan. Cook each side for ten minutes until golden brown and fully cooked.

Slice the Chicken

  • Remove chicken from the pan. Let it cool slightly, then slice it into thin strips.

Toss Chicken in Buffalo Sauce

  • Add sliced chicken to a bowl. Pour buffalo sauce over the chicken and coat it well.

Prepare the Salad Base

  • Place chopped romaine lettuce in a large bowl. Spread it out to make a fresh salad base.
