Ingredients
  

  • Tomatillos – 500g husk removed, washed
  • Green chilies – 2–3 adjust to taste
  • Garlic cloves – 3
  • Onion – 1 small chopped
  • Fresh cilantro – ½ cup
  • Chicken or vegetable broth – 2 cups
  • Olive oil – 1 tbsp
  • Cumin – 1 tsp
  • Salt – to taste
  • Black pepper – to taste
  • Lime juice – 1 tbsp

Instructions
  

Prepare the Vegetables

  • Remove husks from tomatillos and wash them well. Chop onion and garlic. Prepare chilies by removing stems. This step ensures everything is clean and ready for cooking.

Cook the Tomatillos

  • Place tomatillos and chilies in a saucepan. Add water and boil for 10 minutes. They should become soft and slightly pale in color.

Blend the Ingredients

  • Transfer cooked tomatillos and chilies to a blender. Add garlic, onion and cilantro. Blend until smooth. This creates a fresh green sauce base.

Heat the Oil

  • Heat olive oil in a saucepan over medium heat. Once hot, carefully pour in the blended mixture. Stir gently to avoid splashes.

Add Broth and Seasoning

  • Pour in broth and add cumin, salt and pepper. Stir well. This step builds flavor and gives the sauce the right consistency.

Simmer the Sauce

  • Let the sauce simmer for 10 minutes. Stir occasionally. It will thicken slightly and develop a deeper flavor during cooking.

Add Lime Juice

  • Turn off heat and add lime juice. Mix well. This adds freshness and enhances the tangy taste of the sauce.

Cool and Use
