- 4 chicken thighs bone-in, skin-on
- ½ cup pineapple juice
- ¼ cup soy sauce
- ¼ cup ketchup
- 3 tablespoons brown sugar
- 2 garlic cloves minced
- 1 teaspoon ginger grated
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
- Chopped green onions for garnish
Mix pineapple juice, soy sauce, ketchup, and sugar.
Add garlic, ginger, vinegar, and sesame oil.
Whisk until smooth.
Place chicken in a bowl.
Pour marinade over chicken.
Cover with plastic wrap.
Keep in the fridge for 2 hours.
Heat grill or grill pan.
Brush the grill with olive oil.
Place chicken on a hot grill.
Cook for 6 minutes each side.
Brush with more marinade.
Grill until golden and cooked inside.
Remove and rest for 5 minutes.
- Marinate overnight for stronger flavor.
- Use fresh pineapple juice for best taste.
- Charcoal grill gives an extra smoky flavor.
- Don’t overcook, chicken should stay juicy.
- Use extra marinade only for brushing.
