For the Cake:
- 3 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 3 large eggs
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
- 1½ cups mashed ripe bananas about 3 bananas
- 1 cup crushed pineapple drained slightly
- 1 cup chopped pecans
For the Cream Cheese Frosting:
- 8 ounces cream cheese softened
- ½ cup unsalted butter softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- ½ cup chopped pecans for topping
Mix Dry Ingredients
In a large bowl, add flour, sugar, baking soda, salt and cinnamon. Whisk everything together well. Make sure there are no lumps in the flour mixture.
