Ingredients

  • 16 large cookies any flavor
  • 3 cups ice cream any flavor
  • 1/2 cup chocolate chips optional
  • 1/2 cup sprinkles optional
  • 1/2 cup crushed nuts optional

Instructions

Soften the Ice Cream

  • Let the ice cream soften slightly. It should be soft enough to scoop easily without melting fully.

Prepare the Cookies

  • Lay all cookies flat on a tray. Match cookies by size for even and neat sandwiches.

Scoop the Ice Cream

  • Place one large scoop on each cookie. Make sure the scoop sits gently in the center.

Add the Top Cookie

  • Place another cookie on top. Press slightly to spread the ice cream evenly between cookies.

Smooth the Edges

  • Use a spatula or spoon to smooth sides. This helps create a clean and pretty shape.

Add Extra Toppings

  • Roll the sides in sprinkles, nuts or chips. Press gently so toppings stick well.

Freeze the Sandwiches

  • Place sandwiches on a tray. Freeze for at least two hours to help them firm.

Wrap the Sandwiches

  • Wrap each sandwich tightly in plastic wrap. This prevents freezer burn and keeps them fresh.

Freeze Again

  • Place the wrapped sandwiches back in the freezer. Leave them for best texture before serving.

Serve and Enjoy

  • Unwrap, serve, and enjoy the cold, sweet treat. Eat quickly before it melts.

Notes

  • Use firm cookies for better structure.
  • Soften ice cream slightly for easy scooping.
  • Press cookies gently to avoid breaking.
  • Add toppings fast before the ice cream melts.
  • Wrap sandwiches well to keep them fresh.
