Ingredients

For Cheesecake Filling:

  • 1 cup cream cheese softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup whipped cream

For Topping:

  • Maple syrup
  • Fresh strawberries or berries
  • Whipped cream

Instructions
  

Prepare Dry Ingredients

  • In a bowl, mix flour, sugar, baking powder and salt. Stir well so everything is evenly combined for fluffy pancakes.

Mix Wet Ingredients

  • In another bowl, whisk milk, egg, melted butter and vanilla extract. Mix until smooth and slightly frothy for soft texture.

Combine Batter

  • Add wet ingredients into dry ingredients slowly. Stir gently until just combined. Do not overmix to keep pancakes light and fluffy.

Make Cheesecake Filling

  • In a bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract. Mix until creamy and sweet. Fold in whipped cream gently.

Heat the Pan

  • Place a non-stick pan on medium heat. Lightly grease with butter. Make sure the pan is hot but not smoking.

Cook Pancakes
