Ingredients
  

For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 –2 tablespoons cold water

For the Filling:

  • 1 cup unsalted butter softened
  • 1 1/2 cups granulated sugar
  • 4 ounces unsweetened chocolate melted and cooled
  • 1 teaspoon vanilla extract
  • 4 large eggs room temperature

For the Topping:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • Chocolate shavings or curls for garnish

Instructions
 

Make the Pie Crust

  • Combine flour, sugar and salt. Cut in butter until mixture looks like coarse crumbs. Add cold water slowly.

Form the Dough

  • Mix until dough comes together. Flatten into a disk. Wrap in plastic and chill 30 minutes.

Preheat Oven

  • Preheat oven to 350°F (175°C). Roll out the chilled dough on a floured surface.

Fit Dough in Pan

  • Place dough in 9-inch pie pan. Press edges. Trim excess dough. Prick bottom with a fork.

Bake the Crust

  • Bake 15 minutes until lightly golden. Remove and cool completely on a wire rack.

Prepare Chocolate Filling

  • In a large bowl, beat butter and sugar until light and fluffy with an electric mixer.

Add Melted Chocolate

  • Mix melted chocolate and vanilla extract into butter mixture. Beat until smooth.

Incorporate Eggs

  • Add eggs one at a time, beating well after each. The mixture should be creamy and silky.

Fill the Crust

  • Pour chocolate filling into cooled pie crust. Smooth the top with a spatula.

Chill the Pie

  • Refrigerate for at least 4 hours or until set. The longer it chills, the firmer it gets.

Make Whipped Cream Topping

  • Beat heavy cream and powdered sugar until soft peaks form. Spread or pipe over chilled pie.

Add Chocolate Garnish

  • Sprinkle chocolate shavings or curls on top for decoration. Serve immediately or keep chilled.
