Ingredients
  

  • 6 large bell peppers any color
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can 15 oz tomato sauce
  • 1 can 14 oz diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil

Instructions
 

Step 1: Prep the peppers

  • Cut the tops off the peppers. Remove the seeds and white parts. Place them in boiling water for 5 minutes to soften, then drain.

Step 2: Cook the beef

  • In a skillet, heat olive oil over medium heat. Add onion and garlic. Cook for 2–3 minutes. Add beef and cook until browned.

Step 3: Add sauce and rice

  • Stir in tomato sauce, diced tomatoes, oregano, salt, and pepper. Add the cooked rice and mix well. Simmer for 5 minutes.

Step 4: Fill the peppers

  • Place peppers in a baking dish. Fill each with the beef and rice mix. Top with shredded mozzarella cheese.

Step 5: Bake

  • Cover with foil and bake at 375°F (190°C) for 30 minutes. Remove foil and bake for another 10 minutes until cheese melts and turns golden.

Notes

  • Use colorful peppers for a pretty dish.
  • Add a pinch of red pepper flakes for heat.
  • You can replace beef with ground turkey for a lighter version.
  • Fresh herbs like parsley or basil add extra flavor.
