Ingredients
  

  • 4 large potatoes peeled and diced
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika optional
  • 2 tablespoons fresh parsley chopped

Instructions
 

Prepare the Vegetables

  • Peel and dice potatoes. Chop onions and mince garlic. Keep all vegetables ready.

Melt Butter in Pot

  • Add butter to a large pot. Heat on medium until melted.

Cook Onions and Garlic

  • Add onions and garlic. Stir and cook until soft and fragrant.

Add Potatoes and Broth

  • Put diced potatoes into the pot. Pour in chicken or vegetable broth.

Boil and Simmer

  • Bring soup to a boil. Lower heat and simmer for 20 minutes until potatoes are soft.

Blend the Soup

  • Use a blender or immersion blender. Blend until smooth and creamy.

Add Cream and Seasoning

  • Pour in heavy cream. Add salt, pepper and paprika. Stir well.

Cook for 5 More Minutes

  • Simmer for 5 minutes to combine flavors. Taste and adjust seasoning.

Garnish and Serve

  • Serve in bowls. Sprinkle fresh parsley on top. Add extra black pepper if desired.

  • Use starchy potatoes like Russet for creamy soup.
  • Blend soup carefully to avoid splashes.
  • Add a pinch of nutmeg for extra warmth.
  • Make it vegetarian by using vegetable broth.
