Ingredients

  • 3/4 cup sugar
  • 2 egg whites
  • 1 teaspoon almond extract

Prepare the Egg Whites

  • Separate egg whites from yolks carefully. Place whites in a clean bowl. Beat them using a mixer until soft peaks form. This step gives cookies a light and airy texture.

Mix Dry Ingredients

  • In another bowl, add almond flour, sugar and salt. Mix well until combined evenly. This ensures the cookies have a smooth and balanced texture.

Combine the Mixture

  • Add beaten egg whites to the dry ingredients. Add almond and vanilla extracts. Mix gently until a soft sticky dough forms. Do not overmix to keep the texture light.

Shape the Cookies

  • Take small portions of dough. Roll into balls using your hands. Coat each ball lightly in powdered sugar. Place them on a lined baking tray with some space.

Bake the Cookies

  • Preheat oven to 170°C. Bake cookies for about 18–20 minutes. The tops should crack slightly. Edges should turn light golden while centers remain soft.

Cool and Serve

  • Remove cookies from oven and let them cool completely. They will firm up slightly as they cool. Serve fresh or store for later enjoyment.
