Ingredients
  

  • 2 pounds chicken pieces legs or thighs work best
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 4 garlic cloves minced
  • 1 onion finely chopped
  • 2 teaspoons thyme
  • 2 teaspoons paprika
  • 1 teaspoon allspice
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon nutmeg
  • 1 tablespoon brown sugar
  • 1/4 cup chicken broth

Instructions
 

Step 1:

  • Preheat oven to 375°F (190°C).

Step 2:

  • Mix olive oil, soy sauce, lime juice, and spices in a bowl.

Step 3:

  • Add onion, garlic, and brown sugar to the mixture.

Step 4:

  • Place chicken in a large dish and coat with marinade.

Step 5:

  • Cover and refrigerate for at least 1 hour.

Step 6:

  • Arrange chicken in a baking dish and pour marinade over it.

Step 7:

  • Add chicken broth to keep chicken moist during baking.

Step 8:

  • Cover with foil and bake for 30 minutes.

Step 9:

  • Remove foil, baste chicken, and bake uncovered for 20 minutes.

Step 10:

  • Check that chicken is cooked through and golden brown.
