Ingredients

For the pastry:

  • 2 ½ cups all-purpose flour
  • ½ tsp salt
  • ½ cup cold butter cubed
  • ½ cup cold shortening cubed
  • ¼ cup cold water
  • 1 tsp turmeric powder for color

For the filling:

  • 1 lb ground beef
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 Scotch bonnet pepper minced (optional for heat)
  • 1 tsp paprika
  • 1 tsp allspice
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 tbsp tomato paste
  • ½ cup beef broth
  • 2 green onions chopped
  • 1 tsp thyme dried
  • 1 egg beaten (for brushing)

Instructions

Make the Pastry

  • Combine flour, salt, and turmeric in a bowl. Add butter and shortening. Mix until crumbly.

Add Cold Water

  • Gradually add cold water. Mix until dough forms. Wrap in plastic. Chill 30 minutes.

Prepare the Filling

  • Heat a pan. Add onions, garlic, and Scotch bonnet. Cook 2–3 minutes until soft.

Cook the Beef

  • Add ground beef. Break it apart. Cook until no pink remains. Drain excess fat.

Add Spices and Tomato Paste

  • Mix in paprika, allspice, thyme, salt, black pepper, and tomato paste. Stir well.

Simmer With Broth

  • Pour in beef broth. Simmer 5–7 minutes until thick. Add green onions. Cool filling.

Roll the Dough

  • Roll chilled dough on floured surface. Make a rectangle about ¼ inch thick.

Cut Pastry Shapes

  • Cut dough into rectangles (4x6 inches). Adjust size as needed.

Fill the Patties

  • Place 1–2 tbsp beef filling in center of each rectangle. Do not overfill.

Seal the Patties

  • Fold dough over filling. Press edges with fork to seal tightly.

Brush With Egg Wash

  • Brush beaten egg over top of each patty. This gives golden color.

Bake the Patties

  • Preheat oven to 375°F (190°C). Place patties on parchment-lined sheet. Bake 20–25 minutes.

Cool Slightly

  • Remove from oven. Cool 5 minutes. Serve warm and enjoy golden patties.

Notes

  • Chill the dough well to get a flaky crust.
  • Do not overfill, or patties may burst while baking.
  • Use a fork to seal edges tightly for a neat look.
  • Adjust Scotch bonnet pepper based on spice preference.
  • Make extra filling and freeze for future use.
