Instructions
 

Preheat the Oven

  • Preheat your oven to 180°C (350°F). Line a 12-cup muffin pan with paper liners. This ensures muffins bake evenly and do not stick.

Mash the Bananas

  • In a large bowl, mash the ripe bananas with a fork. Make sure they are smooth but still a little chunky. This adds natural sweetness and flavor.

Mix Wet Ingredients

  • Add melted butter, sugar, egg and vanilla to the mashed bananas. Stir until fully combined. This creates a creamy, smooth batter.

Combine Dry Ingredients

  • In a separate bowl, mix flour, baking soda, salt and cinnamon. Stir to distribute evenly. This helps the muffins rise and adds flavor.

Mix Wet and Dry Ingredients

  • Gradually fold the dry ingredients into the wet banana mixture. Stir gently until just combined. Do not overmix, or muffins become tough.

Add Optional Ingredients

  • If using walnuts or chocolate chips, fold them into the batter carefully. They add texture and extra flavor without overpowering the bananas.

Fill Muffin Cups

  • Spoon the batter into the lined muffin cups. Fill each cup about ¾ full. This allows room for the muffins to rise without spilling.

Bake the Muffins

  • Place the pan in the oven and bake for 18–20 minutes. Muffins are done when golden on top and a toothpick comes out clean.

Cool and Serve
