Ingredients
  

  • 500 g ground beef
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 2 cups enchilada sauce
  • 1 1/2 cups shredded cheddar cheese
  • 8 small flour tortillas
  • 2 tablespoons oil
  • Fresh cilantro optional for garnish

Instructions
  

Preheat the Oven

  • Preheat your oven to 180°C (350°F). This helps cook the enchiladas evenly. Grease a baking dish lightly so the enchiladas do not stick.

Cook the Beef

  • Heat oil in a skillet over medium heat. Add chopped onion and cook until soft. Add garlic and cook for one minute. Then add ground beef.

Season the Filling

  • Cook the beef until browned. Add salt, pepper, chili powder and cumin. Mix well. Cook for a few more minutes until everything is fully combined.

Add Sauce to Beef

  • Pour half a cup of enchilada sauce into the beef mixture. Stir well. This keeps the filling moist and flavorful. Turn off the heat after mixing.

Prepare the Tortillas

  • Warm the tortillas slightly so they are easy to roll. You can heat them in a pan or microwave for a few seconds.

Fill and Roll

  • Take one tortilla and add a spoon of beef mixture. Sprinkle some cheese. Roll it tightly and place it in the baking dish. Repeat for all tortillas.

Add Sauce and Cheese

  • Pour the remaining enchilada sauce over the rolled tortillas. Spread it evenly. Add the rest of the cheese on top for a rich finish.

Bake the Enchiladas

  • Place the baking dish in the oven. Bake for 20 to 25 minutes until cheese is melted and bubbly. The edges should look slightly golden.

Serve Hot

  • Remove from oven and let it rest for a few minutes. Garnish with fresh cilantro if you like. Serve warm and enjoy.
