Ingredients
  

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup cold unsalted butter cubed
  • 3/4 cup cold buttermilk

For the Sausage Gravy:

  • 1 pound breakfast sausage
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups whole milk
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder

Instructions
 

Preheat the Oven

  • Preheat your oven to 220°C (425°F). Line a baking sheet with parchment paper. This helps prevent sticking and makes cleaning easier after baking.

Mix Dry Ingredients for Biscuits

  • In a large bowl, combine flour, baking powder, baking soda, salt and sugar. Stir well so everything mixes evenly. This step ensures fluffy and tender biscuits.

Add Butter and Buttermilk

  • Add cold butter cubes to the flour mixture. Use your fingers or a cutter to mix. It should look crumbly. Pour in buttermilk and stir gently until dough forms.

Shape and Bake Biscuits

  • Place dough on a floured surface. Roll gently to one-inch thickness. Cut into rounds using a cutter. Place on baking sheet. Bake 12–15 minutes until golden brown.

Cook the Sausage

  • While biscuits bake, heat a large skillet over medium heat. Add breakfast sausage. Cook until browned and fully cooked. Break it into small pieces while cooking.

Make the Gravy

  • Sprinkle flour over cooked sausage. Stir well and cook for one minute. Slowly pour in milk while whisking. Cook until thick and creamy. Add salt, pepper, and garlic powder.

Serve Together

  • Split warm biscuits in half. Spoon hot sausage gravy over the top. Serve immediately while warm and creamy.

Notes

  • Use very cold butter for flaky biscuits.
  • Do not overmix biscuit dough.
  • Cook gravy slowly for smooth texture.
  • Add extra black pepper for more flavor.
  • If gravy is too thick, add more milk.
  • Bake biscuits close together for softer sides.
