Ingredients

  • Cooked chicken shredded – 3 cups
  • Corn tortillas – 8 pieces
  • Cheddar cheese shredded – 2 cups
  • Monterey Jack cheese shredded – 1 cup
  • Cream of chicken soup – 2 cans
  • Diced tomatoes with green chilies – 1 can
  • Onion chopped – 1 medium
  • Bell pepper chopped – 1 medium
  • Garlic minced – 2 cloves
  • Chicken broth – 1 cup
  • Chili powder – 1 teaspoon
  • Cumin – ½ teaspoon
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Butter or oil – 2 tablespoons

Instructions

Prepare the Oven

  • Preheat your oven to 180°C (350°F). Grease your baking dish lightly with butter or oil. This helps prevent sticking and keeps the casserole easy to serve later.

Cook the Vegetables

  • Heat butter in a skillet over medium heat. Add onion, bell pepper and garlic. Cook until soft and fragrant. Stir often so nothing burns or sticks.

Make the Sauce

  • Add cream of chicken soup, diced tomatoes and chicken broth to the skillet. Stir well until smooth. Add chili powder, cumin, salt and pepper for flavor.

Add Chicken

  • Mix shredded chicken into the sauce. Stir until the chicken is well coated. Let it simmer for a few minutes to blend the flavors nicely.

Layer the Casserole

  • Cut tortillas into pieces. Place a layer in the baking dish. Add a layer of chicken mixture. Sprinkle cheese on top. Repeat layers until everything is used.

Add Final Cheese Layer

  • Finish with a thick layer of cheese on top. This will melt and create a golden crust. Make sure it covers the whole surface evenly.

Bake the Casserole

  • Place the dish in the oven. Bake for 35–40 minutes. The cheese should be melted and bubbly. The edges should look slightly golden and crispy.

Rest Before Serving

  • Remove from oven and let it rest for 5–10 minutes. This helps the casserole set. It also makes slicing and serving easier.

Notes

  • Use rotisserie chicken for faster cooking.
  • Do not skip resting time after baking.
  • Add jalapeños if you like spicy food.
  • Use fresh cheese for better melting.
  • Cut tortillas evenly for neat layers.
  • Taste the sauce before layering and adjust seasoning.
