Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions
 

Mix Dry Ingredients

  • In a large bowl, combine flour, baking powder, salt and sugar. Whisk together to remove lumps. This helps make pancakes light and fluffy.

Mix Wet Ingredients

  • In another bowl, whisk milk, egg, melted butter and vanilla. Mix until smooth. Make sure butter is not too hot or it will cook the egg.

Combine Wet and Dry

  • Pour wet mixture into dry ingredients. Stir gently until combined. Do not overmix. Some small lumps are fine for soft pancakes.

Heat the Skillet

  • Place a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil. Heat until warm, but not smoking.

Pour Batter on Skillet

  • Use a ladle to pour batter onto the skillet. Make pancakes about 3–4 inches wide. Leave space between each pancake to cook evenly.

Cook the Pancakes

  • Cook until bubbles form on top and edges look dry. Flip carefully with a spatula. Cook another 1–2 minutes until golden brown.

Serve Warm

  • Transfer pancakes to a plate. Keep warm with a towel or in a low oven if making many. Serve immediately with syrup, butter or fruit toppings.

  • Do not overmix batter; it keeps pancakes fluffy.
  • Use room temperature eggs for better texture.
  • Heat skillet properly to avoid sticking.
  • Add blueberries or chocolate chips for variety.
  • Keep cooked pancakes warm in a low oven.
  • Flip pancakes gently to avoid tearing.
