Ingredients
  

  • 2 tablespoons butter
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 cup Monterey Jack cheese
  • 1 can diced tomatoes with green chilies drained
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 small jalapeño finely chopped (optional)

Instructions
  

Melt the Butter

  • Place a saucepan on medium heat. Add butter and let it melt slowly. Do not burn it. Keep stirring lightly until it becomes smooth and slightly bubbly.

Cook the Onion

  • Add chopped onion into the melted butter. Cook for about three minutes. Stir often until the onion becomes soft and slightly golden in color.

Add Garlic

  • Now add minced garlic into the pan. Cook for one minute only. Stir continuously so it does not burn. The smell will become rich and fragrant.

Pour Milk and Cream

  • Slowly pour milk and heavy cream into the pan. Stir gently to combine everything. Let it heat up but do not let it boil.

Add Cheese

  • Add shredded cheddar and Monterey Jack cheese slowly. Stir constantly so the cheese melts evenly. The mixture should become thick and creamy.

Mix Tomatoes and Spices

  • Add diced tomatoes, salt, black pepper and paprika. Mix well. Stir everything until fully combined and heated through.

Add Jalapeño

  • Add chopped jalapeño if you like some spice. Mix it well into the queso. Let it cook for two more minutes.

Serve Warm

  • Turn off the heat and transfer queso to a serving bowl. Serve immediately while it is warm and smooth.

Notes

  • Use freshly shredded cheese for better melting
  • Stir constantly to avoid lumps
  • Do not overheat or cheese may separate
  • Adjust spice level with more or less jalapeño
  • Add a splash of milk if queso becomes too thick
