Ingredients
  

  • 10 small flour tortillas
  • 3 cups fresh spinach chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 cup sour cream
  • 1 cup enchilada sauce
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • ½ teaspoon chili powder optional

Prepare the Spinach

  • Wash spinach properly. Chop it into small pieces. Heat olive oil in a pan. Add spinach and cook until soft. Remove extra water if needed.

Cook Onion and Garlic

  • Add chopped onion to the same pan. Cook until soft. Add garlic and cook for one minute. This gives a strong and tasty base flavor.

Make the Filling

  • In a bowl, mix cooked spinach, ricotta cheese, half mozzarella and seasoning. Stir well until creamy. This mixture will be the enchilada filling.

Prepare Tortillas

  • Warm tortillas slightly in a pan or microwave. This makes them soft and easy to roll without breaking during stuffing.

Fill the Enchiladas

  • Take one tortilla and add spinach filling inside. Roll it tightly. Place it in a greased baking dish. Repeat until all tortillas are filled.

Add Sauce

  • Pour enchilada sauce evenly over the rolled tortillas. Make sure every piece is covered well. This keeps them moist and flavorful while baking.

Add Cheese
