  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 1 tablespoon lemon juice optional
  • Whipped cream for topping optional
  • Fresh berries or fruit syrup optional

Instructions

Preheat the Oven

  • Set your oven to 325°F (160°C). Place the rack in the center position.

Soften the Cream Cheese

  • Leave the cream cheese at room temperature for 20 minutes until soft and smooth.

Beat the Cream Cheese

  • In a mixing bowl, beat the cream cheese with sugar until creamy and fluffy.

Add the Eggs

  • Add one egg at a time, mixing slowly until fully combined.

Add Vanilla and Sour Cream

  • Stir in vanilla extract, lemon juice, and sour cream. Mix until the batter is smooth.

Pour the Filling

  • Pour the cheesecake mixture into the Keebler crust. Smooth the top with a spatula.

Bake the Cheesecake

  • Place the cheesecake on a baking sheet. Bake for 40–45 minutes until edges are firm.

Cool It Down

  • Turn off the oven and open the door slightly. Let the cheesecake cool slowly for 1 hour.

Chill the Cheesecake

  • Move the cheesecake to the fridge. Chill for at least 3–4 hours or overnight.

Add Toppings and Serve

  • Top with whipped cream and fresh berries before serving. Enjoy your homemade cheesecake!

Notes

  • Don’t overbeat the batter. Too much air can cause cracks.
  • Always use room-temperature cream cheese for a smooth texture.
  • Cool the cheesecake slowly to prevent sinking in the center.
  • For extra flavor, add lemon zest or a fruit swirl to the filling.
  • Chill overnight for the best taste and texture.
