Ingredients
  

  • Shrimp 1 pound (peeled and deveined)
  • Zucchini 3 medium (spiralized into noodles)
  • Butter 2 tablespoons
  • Olive oil 1 tablespoon
  • Garlic 3 cloves (minced)
  • Lemon juice 2 tablespoons
  • Parmesan cheese ¼ cup (grated)
  • Red pepper flakes ¼ teaspoon
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley 2 tablespoons (chopped)

Instructions
 

Prepare the Zucchini Noodles

  • Spiralize the zucchini into noodles. Place noodles in a bowl. Sprinkle with salt and let sit for ten minutes.

Pat Dry the Zucchini

  • After ten minutes, squeeze out extra water. Use a clean towel or paper towels. This keeps noodles from getting soggy.

Season the Shrimp

  • Place shrimp in a bowl. Add salt, pepper and red pepper flakes. Toss well to coat evenly.

Cook the Shrimp

  • Heat olive oil in a skillet. Add shrimp and cook for two minutes per side. Remove shrimp from skillet.

Make Garlic Butter Sauce

  • In the same skillet, add butter and garlic. Cook for one minute until fragrant and golden.

Add Zucchini Noodles

  • Add zucchini noodles to the skillet. Toss with garlic butter for two minutes only. Do not overcook.

Add Shrimp Back

  • Return shrimp to the skillet. Add lemon juice and Parmesan cheese. Toss everything together gently.

Finish and Serve

  • Remove skillet from heat. Sprinkle parsley on top. Serve hot and enjoy the fresh flavors.

Notes

  • Do not overcook zucchini noodles.
  • Squeeze water out for firmer noodles.
  • Use fresh shrimp for best taste.
  • Add lemon juice at the end for brightness.
  • Keep heat medium to avoid soggy noodles.
