Ingredients
  

  • 1 cup plain yogurt
  • 1 cup sugar
  • 3 large eggs
  • ½ cup vegetable oil
  • Zest of 2 lemons
  • ¼ cup fresh lemon juice
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • Powdered sugar for topping optional

Instructions
 

Preheat the Oven

  • Preheat oven to 350°F or 175°C. Line the cake pan with baking paper.

Mix Yogurt and Sugar

  • Add yogurt and sugar to a bowl. Whisk until smooth and creamy.

Add Eggs

  • Add eggs one by one. Whisk well after each egg.

Add Oil and Lemon

  • Pour in oil, lemon zest and lemon juice. Mix gently until combined.

Combine Dry Ingredients

  • In another bowl, mix flour, baking powder and salt evenly.

Mix Batter

  • Slowly add dry ingredients to wet mixture. Stir gently until smooth.

Pour into Pan

  • Pour batter into prepared pan. Smooth the top with a spatula.

Bake the Cake

  • Bake for 35 to 40 minutes until golden and firm.

Check Doneness

  • Insert a toothpick in center. It should come out clean.

Cool and Serve

  • Let cake cool completely. Dust with powdered sugar if desired.
