Ingredients
  

  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground cloves
  • 1 cup sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 cup Libby’s pure pumpkin puree
  • ½ cup vegetable oil
  • ¼ cup water
  • 1 tsp vanilla extract

Instructions
 

Preheat the oven

  • Preheat your oven to 350°F (175°C). Grease your loaf pan and set it aside.

Mix dry ingredients

  • In a bowl, mix flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.

Mix wet ingredients

  • In another bowl, whisk together sugar, brown sugar, eggs, pumpkin puree, oil, water, and vanilla.

Combine everything

  • Add the dry mix into the wet mix. Stir gently until just combined. Don’t overmix.

Pour into pan

  • Pour the batter into the prepared loaf pan. Smooth the top with a spatula.

Bake

  • Bake for 55–65 minutes or until a toothpick comes out clean from the center.

Cool and serve

  • Let the bread cool in the pan for 10 minutes. Then transfer to a rack to cool completely before slicing.

Notes

  • Use Libby’s pure pumpkin puree for the best flavor and texture.
  • Don’t overmix the batter; it keeps the bread soft.
  • Add nuts, chocolate chips, or raisins for extra flavor.
  • Line your loaf pan with parchment paper for easy removal.
  • Let it cool before slicing to keep it moist.
