Ingredients
  

  • 10 fresh limes
  • 2 tablespoons salt
  • 1 tablespoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 tablespoon mustard seeds
  • ½ teaspoon fenugreek seeds
  • 1 teaspoon cumin seeds
  • ¼ cup vegetable oil
  • 2 tablespoons vinegar
  • 1 tablespoon sugar optional

Instructions
 

Wash the Limes

  • Wash the limes well. Wipe them dry with a clean towel to remove all moisture.

Cut the Limes

  • Cut each lime into small pieces. Remove the seeds carefully to keep it less bitter.

Add the Salt

  • Put lime pieces in a bowl. Sprinkle salt over them. Mix well using a spoon.

Sun-Dry the Limes

  • Place the salted lime pieces under sunlight for one to two days. This helps soften them.

Roast the Spices

  • In a small pan, dry roast mustard, cumin and fenugreek seeds for one minute. Let them cool.

Grind the Spices

  • Grind the roasted seeds into a coarse powder. Keep aside.

Mix the Spices

  • In a bowl, mix chili powder, turmeric, and the ground spice mix. Add sugar if you like a sweet taste.

Heat the Oil

  • Heat oil in a pan until warm. Add vinegar and remove from heat.

Combine Everything

  • Pour the warm oil over the lime mixture. Stir well so every piece gets coated with spices.

Store the Pickle

  • Transfer the mix to a clean, dry glass jar. Seal tightly. Keep in a cool place for one week before using.

Shake the Jar Daily

  • Shake the jar gently every day so the spices mix evenly.

Serve and Enjoy

  • After a week, the lime pickles are ready. Enjoy them with rice or any meal.

Notes

  • Always dry the limes completely to avoid spoilage.
  • Use glass jars only, not plastic or metal containers.
  • The longer it sits, the richer the flavor becomes.
  • You can add garlic or ginger for extra flavor.
  • Warm oil helps the spices blend better with the lime.
