Ingredients
  

  • 4 medium potatoes diced
  • 2 chicken breasts cut into cubes
  • 1 cup shredded cheddar cheese
  • 4 slices of bacon cooked and crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup green onions chopped
  • 1/2 cup sour cream for topping

Instructions
 

Preheat the Oven

  • Set your oven to 400°F (200°C) and let it preheat while you prepare the ingredients.

Prepare the Potatoes

  • Cut the potatoes into small cubes. Toss them in olive oil, garlic powder, paprika, salt, and pepper.

Bake the Potatoes

  • Spread the potatoes on a baking dish and bake for 20 minutes until they start to get golden.

Add the Chicken

  • Take out the dish and add the cubed chicken on top of the potatoes. Mix gently to combine.

Bake Again

  • Cover the dish with foil and bake for another 20 minutes. This helps the chicken cook through and stay tender.

Add Cheese and Bacon

  • Remove the foil. Sprinkle cheddar cheese and bacon bits over the top. Bake for 5–10 more minutes until cheese melts perfectly.

Garnish and Serve

  • Once done, take it out and top with chopped green onions and a dollop of sour cream. Serve warm and enjoy!

  • Cut the potatoes and chicken into small, even pieces for fast cooking.
  • You can use cooked rotisserie chicken for an even quicker meal.
  • Add extra cheese for more gooey flavor.
