Ingredients
  

  • 1 cup peanut butter creamy or chunky
  • 1/2 cup honey or corn syrup
  • 2 cups rolled oats
  • 1 cup chocolate chips
  • 1/2 cup chopped nuts optional
  • 1 teaspoon vanilla extract
  • Pinch of salt

Optional add-ins:

  • Mini marshmallows
  • Shredded coconut
  • Butterscotch chips

Instructions
 

Prepare the Pan

  • Line an 8x8-inch baking pan with parchment paper. This makes it easy to remove the bars later.

Mix Peanut Butter and Honey

  • In a large bowl, combine peanut butter and honey. Stir until smooth and creamy.

Add Vanilla and Salt

  • Add vanilla extract and a small pinch of salt. Mix until everything is blended.

Add Oats and Nuts

  • Pour in rolled oats and chopped nuts. Stir gently until the mixture is fully combined.

Press Into Pan

  • Transfer mixture to the prepared pan. Press evenly into all corners with a spatula or spoon.

Melt Chocolate Chips

  • In a microwave-safe bowl, melt chocolate chips in 30-second intervals. Stir between each interval until smooth.

Spread Chocolate Layer

  • Pour melted chocolate over the oat mixture. Spread evenly to cover the top.

Optional Toppings

  • Add shredded coconut, mini marshmallows, or extra nuts on top. Press lightly so they stick.

Chill the Bars

  • Place the pan in the fridge for 1–2 hours. This helps the bars firm up.

Cut and Serve

  • Remove from the pan and slice into 12 bars. Serve immediately or store for later.

Notes

  • Use creamy peanut butter for smooth bars.
  • Press mixture firmly into the pan to prevent crumbling.
  • Chill longer for firmer bars.
  • Add extra chocolate or nuts for more flavor.
  • Store bars in an airtight container for freshness.
