Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless chicken breast diced
  • 1 small onion chopped
  • 3 garlic cloves minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes chopped
  • 1 teaspoon Italian seasoning
  • ½ teaspoon chili flakes optional
  • Salt and pepper to taste
  • 2 cups baby spinach
  • Fresh basil for garnish

Instructions

Cook the Chicken

  • Heat olive oil in a large pot. Add diced chicken and cook until golden brown. Remove and set aside.

Sauté Onion and Garlic

  • In the same pot, add chopped onion and garlic. Cook until they turn soft and smell nice. This builds the soup’s base flavor.

Add Broth and Seasoning

  • Pour in the chicken broth. Add Italian seasoning, salt, and pepper. Stir well to mix all the flavors together.

Add the Chicken Back

  • Put the cooked chicken back into the pot. Let it simmer for 10 minutes so the flavors blend well.

Add Cream and Cheese

  • Now add heavy cream and Parmesan cheese. Stir slowly until the soup becomes creamy and smooth.

Add Sun-Dried Tomatoes

  • Add chopped sun-dried tomatoes to the soup. They bring a sweet and tangy taste that makes the soup special.

Add Spinach

  • Stir in the baby spinach and cook until it wilts. The green color makes the soup look lovely and fresh.

Taste and Adjust

  • Taste your soup. Add more salt, pepper, or chili flakes if you like it spicy.

Serve and Garnish

  • Ladle the soup into bowls. Garnish with fresh basil and a sprinkle of Parmesan. Serve hot and enjoy every spoonful.

Notes

  • Use fresh chicken for better flavor.
  • Don’t skip sun-dried tomatoes—they add a unique taste.
  • Use fresh garlic for the best aroma.
  • Add more cream if you want a thicker soup.
  • Serve it right away while hot and creamy.
