Ingredients
  

  • Cooked chicken shredded – 3 cups
  • Mayonnaise – ½ cup
  • Greek yogurt – ¼ cup
  • Honey – 2 tablespoons
  • Dijon mustard – 1 tablespoon
  • Celery chopped – 1 cup
  • Red grapes halved – 1 cup
  • Apple chopped – 1 medium
  • Pecans or walnuts chopped – ½ cup
  • Green onions chopped – 2 tablespoons
  • Lemon juice – 1 tablespoon
  • Salt – ½ teaspoon
  • Black pepper – ¼ teaspoon
  • Fresh parsley chopped – 2 tablespoons

Instructions
 

Prepare the chicken

  • Cook chicken in a pot or skillet. Use boiled or roasted chicken. Shred it into small pieces.

Chop fruits and veggies

  • Chop celery, grapes, apple, and green onions. Keep them small for easy mixing.

Make the dressing

  • Mix mayonnaise, Greek yogurt, honey, Dijon mustard, lemon juice, salt, and pepper.

Combine chicken and dressing

  • Add chicken to a large bowl. Pour dressing over it. Mix until chicken is well coated.

Add fruits and nuts

  • Add grapes, apple, celery, and nuts. Stir gently to keep them whole.

Add green onions

  • Add chopped green onions and parsley. Mix lightly to combine.

Chill the salad

  • Cover the bowl and chill for 30 minutes. This helps flavors blend nicely.

Taste and adjust

  • Taste the salad. Add more salt or honey if needed. Mix again before serving.

Serve the salad

  • Serve on bread, crackers or a bed of lettuce. Add extra parsley on top.
