Ingredients
  

  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream
  • 1 tablespoon instant espresso powder
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter
  • ¼ cup cocoa powder for coating
  • 2 tablespoons powdered sugar optional coating
  • 2 tablespoons finely chopped nuts optional

Instructions
 

Heat the Cream

  • Pour heavy cream into a small saucepan. Heat it on low heat until warm but not boiling. Stir gently while heating so the cream warms evenly.

Add the Chocolate

  • Place chocolate chips in a mixing bowl. Pour the warm cream over the chocolate. Let it sit for two minutes so the chocolate begins to melt.

Mix Until Smooth

  • Use a whisk or spoon to stir the chocolate and cream mixture. Mix slowly until the chocolate melts completely and the mixture becomes smooth and glossy.

Add Espresso and Flavor

  • Add instant espresso powder, vanilla extract and butter to the chocolate mixture. Stir well until everything combines smoothly and the espresso flavor spreads evenly.

Chill the Mixture

  • Cover the bowl with plastic wrap and place it in the refrigerator. Chill for about one hour until the mixture becomes firm enough to shape.

Prepare the Coating

  • Place cocoa powder, powdered sugar or chopped nuts in separate small bowls. These will be used to coat the truffles after shaping.

Scoop the Chocolate Mixture

  • Remove the chilled chocolate mixture from the refrigerator. Use a spoon or small scoop to take small portions of the mixture.

Shape the Truffle Balls

  • Roll each portion between your palms to form a smooth ball. Work quickly so the chocolate does not melt from the warmth of your hands.

Coat the Truffles

  • Roll the chocolate balls in cocoa powder, powdered sugar, or chopped nuts. Make sure each truffle is fully coated for flavor and texture.

Chill Again Before Serving

  • Place the finished truffles on a tray lined with parchment paper. Chill them again for about 20 minutes before serving for the best texture.
