Ingredients

  • 1 ½ lbs boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 tsp apple cider vinegar
  • 3 garlic cloves minced
  • 1 ½ tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp onion powder
  • ½ tsp oregano
  • ½ tsp black pepper
  • ½ tsp salt
  • ¼ tsp cayenne pepper optional for spice

Instructions

Step 1: Make the marinade

  • In a bowl, mix olive oil, lime juice, vinegar, garlic and all the spices. Whisk well until blended.

Step 2: Marinate the chicken

  • Place the chicken breasts in the bowl. Coat well with the adobo mixture. Cover and refrigerate for at least 30 minutes (or up to 4 hours for best flavor).

Step 3: Preheat the grill or pan

  • Heat a grill pan or skillet over medium-high heat. Brush lightly with oil to prevent sticking.

Step 4: Cook the chicken

  • Place the marinated chicken on the grill. Cook for 5–7 minutes on each side, until golden brown and fully cooked. The internal temperature should reach 165°F (74°C).

Step 5: Rest the chicken

  • Remove the chicken and let it rest for 5 minutes. This helps the juices stay inside.

Step 6: Slice and serve

  • Slice the chicken into strips. Serve hot with rice, tortillas or salad.

Notes

  • Use chicken thighs for juicier meat.
  • Marinate overnight for deeper flavor.
  • Add a bit of orange juice for a sweet touch.
  • Grill on an open flame for smoky flavor.
  • Cut chicken evenly for even cooking.
  • Don’t skip resting the meat—it keeps it moist.
  • Save leftover marinade for basting while grilling.
