Ingredients
  

  • 500 g fresh mushrooms sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 3 cups vegetable or chicken stock
  • 1 cup heavy cream
  • Salt to taste
  • Black pepper to taste
  • Fresh thyme or parsley for garnish

Instructions
 

Heat Butter and Oil

  • Heat butter and olive oil in a large pot over medium heat.

Cook Onion

  • Add chopped onion. Cook until soft and lightly golden.

Add Garlic

  • Add minced garlic. Stir and cook for one minute.

Add Mushrooms

  • Add sliced mushrooms. Cook until soft and all water evaporates.

Season Mushrooms

  • Add salt and black pepper. Stir well to coat mushrooms evenly.

Add Stock

  • Pour in stock. Bring mixture to a gentle boil.

Simmer Soup

  • Lower heat. Let soup simmer for 10 minutes.

Blend Soup

  • Blend soup until smooth using a hand blender or regular blender.

Add Cream

  • Return soup to pot. Add cream and stir gently.

Final Heat

  • Heat soup gently for five minutes. Do not boil.

Taste and Adjust

  • Taste soup. Adjust salt and pepper if needed.

Serve Hot

  • Pour into bowls. Garnish with herbs and serve warm.

Notes

  • Use fresh mushrooms for best flavor.
  • Do not rush cooking mushrooms.
  • Let mushroom water cook off fully.
  • Blend soup carefully while hot.
  • Add cream at the end for smooth texture.
