Ingredients
  

  • 1 cup milk low fat or whole
  • 1 scoop vanilla protein powder
  • 2 tablespoons cream cheese softened
  • 1 tablespoon sugar or honey
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons light cream or half and half
  • 2 tablespoons crushed graham crackers optional topping

Mix the Base Ingredients

  • In a mixing bowl, combine milk and vanilla protein powder. Whisk well until smooth. Make sure there are no lumps. This mixture forms the base of the ice cream.

Add the Cream Cheese

  • Add softened cream cheese to the bowl. Whisk until fully blended. The cream cheese gives the ice cream a rich cheesecake flavor and creamy texture.

Add Lemon Flavor

  • Pour lemon juice and add lemon zest to the mixture. Stir well so the citrus flavor spreads evenly. This step gives the ice cream its fresh and bright taste.

Sweeten the Mixture

  • Add sugar or honey to the bowl. Stir well until it dissolves completely. This balances the tangy lemon flavor and makes the dessert taste sweeter.

Add Vanilla and Cream

  • Pour the mixture into the Ninja Creami pint container. Do not fill above the max line. Smooth the top with a spoon so the mixture freezes evenly.

Freeze the Base

  • Place the container in the freezer for about 8–10 hours. The mixture must freeze completely before using the Ninja Creami machine.

Process in Ninja Creami

  • Remove the frozen container from the freezer. Place it into the Ninja Creami machine. Select the “Lite Ice Cream” function and let the machine process the mixture.

Re-Spin if Needed

  • Check the texture after the first spin. If it looks crumbly, run the “Re-Spin” function once more. This makes the ice cream smoother and creamier.

Add Toppings and Serve
