Ingredients

  • 2 cups white sugar
  • ½ cup light corn syrup
  • ½ cup water
  • 2 egg whites room temperature
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • Pinch of salt

Instructions

Prepare the Pan

  • Line a baking sheet with parchment paper. Set it aside before starting the candy process.

Heat Sugar Mixture

  • Add sugar, corn syrup, and water to a saucepan. Cook over medium heat until sugar fully dissolves.

Check Temperature

  • Attach a candy thermometer. Cook until the mixture reaches 250°F, also called the hard-ball stage.

Beat Egg Whites

  • Beat egg whites with salt in a bowl. Mix until stiff peaks form and look glossy.

Add Syrup Slowly

  • Pour hot syrup into egg whites slowly. Keep mixing at low speed to avoid splashing.

Increase Mixing Speed

  • Turn mixer to high speed. Beat until mixture thickens and holds its shape.

Add Flavor and Nuts

  • Mix in vanilla extract and chopped pecans. Stir gently to keep texture light.

Shape the Candy

  • Drop spoonfuls onto parchment paper. Let candy set at room temperature until firm.

Notes

  • Use a candy thermometer for best results.
  • Avoid humid days. Moist air affects candy texture.
  • Beat until mixture loses shine.
  • Work fast when shaping the candy.
  • Use fresh egg whites only.
