Ingredients
  

For the Stuffed Chicken:

  • 4 boneless skinless chicken breasts
  • 6 oz cream cheese softened
  • 1 cup shredded mozzarella cheese
  • 1 cup chopped spinach fresh or thawed frozen
  • 2 cloves garlic minced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup all-purpose flour for coating
  • 2 tbsp olive oil for searing

For the Marsala Mushroom Sauce:

  • 8 oz mushrooms sliced
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 2 tbsp butter

Instructions
 

Prepare the Stuffing

  • Mix cream cheese, mozzarella, chopped spinach and minced garlic. Add salt and pepper. Stir until creamy and smooth.

Prepare the Chicken

  • Slice a pocket in each chicken breast carefully. Do not cut all the way through. This will hold the stuffing.

Stuff the Chicken

  • Fill each chicken breast with the cheese-spinach mix. Secure with toothpicks or kitchen twine to keep it closed.

Coat the Chicken

  • Lightly season chicken with salt and pepper. Dust with flour to help it brown and hold the stuffing inside.

Sear the Chicken

  • Heat olive oil in a skillet. Sear chicken on both sides until golden brown. This locks in juices.

Cook the Mushrooms

  • Remove chicken temporarily. Add sliced mushrooms to the skillet. Cook until soft and slightly browned.

Add Marsala Sauce

  • Pour Marsala wine into the skillet. Let it simmer for a few minutes to reduce slightly.

Add Chicken Broth

  • Add chicken broth and butter. Stir to combine. Return chicken to the pan carefully.

Simmer Chicken

  • Cover and simmer for 10–12 minutes. Chicken should reach safe internal temperature and stay tender.

Serve

  • Remove toothpicks or twine carefully. Plate chicken with sauce and mushrooms. Spoon extra sauce over the top.
