Ingredients
  

  • 1 cup cake flour
  • cups granulated sugar
  • 12 large egg whites room temperature
  • 1 teaspoon cream of tartar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange extract
  • 1 tablespoon fresh orange zest
  • ¾ cup fresh orange juice

For the cream topping:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract
  • Extra orange zest for garnish

Instructions
  

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Do not grease the angel food cake pan. This helps the batter stick and rise properly for a light texture.

Sift Dry Ingredients

  • In a bowl, sift cake flour and half of the sugar together. This step removes lumps and makes the cake soft and airy.

Beat Egg Whites

  • In a large bowl, beat egg whites until foamy. Add cream of tartar and salt. Continue beating until soft peaks form. This gives the cake its fluffy structure.

Add Sugar Slowly

  • Add the remaining sugar slowly while beating. Continue until stiff peaks form. The mixture should look glossy and smooth.

Add Flavor

  • Gently mix in vanilla extract, orange extract, orange zest and orange juice. Fold carefully to keep the batter light and airy.

Combine Flour Mixture

  • Add the flour mixture in small parts. Fold gently using a spatula. Do not overmix or the cake may lose its soft texture.

Bake the Cake

  • Pour the batter into the pan. Smooth the top lightly. Bake for 35–40 minutes until golden and springy to touch. Invert the pan to cool completely.

Prepare the Cream

  • Whip heavy cream with powdered sugar and vanilla extract until soft peaks form. This will be used as a light topping.
