Ingredients
  

  • 4 cups crumbled cornbread
  • 1 cup day-old bread cubes
  • 1 cup chopped celery
  • 1 medium onion chopped
  • ½ cup unsalted butter
  • 2 cups chicken broth
  • 1 pint fresh oysters with liquid
  • 2 eggs lightly beaten
  • 1 teaspoon poultry seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried sage optional

Instructions
 

Preheat and Prepare

  • Preheat your oven to 350°F (175°C). Grease a large baking dish with butter.

Sauté Vegetables

  • Melt butter in a skillet over medium heat. Add onion and celery. Cook until soft and fragrant, about 5 minutes.

Mix the Base

  • In a large bowl, combine cornbread and bread cubes. Add the cooked vegetables and stir to mix well.

Add Oysters and Seasoning

  • Add oysters with their liquid to the bread mixture. Stir in salt, pepper, poultry seasoning, and sage if using.

Add Liquids and Eggs

  • Pour in the chicken broth and beaten eggs. Stir until everything is moist but not soupy. Add more broth if it looks too dry.

Bake

  • Pour the mixture into the greased baking dish. Bake for 40–45 minutes until golden brown on top and set in the middle.

Serve Warm

  • Let it rest for 10 minutes before serving. The flavors blend beautifully as it cools slightly.
